La Gritona Reposado Tequila is a delicately rested tequila distilled by Melly Barajas and her women in their small distillery in Valle De Guadalupe, Jalisco (NOM 1533). Melly distills La Gritona only with mature agaves aged between 8 and 10 years, and all of her piños must come from the iron-rich red soil of the native highlands of Jalisco. These agave plants are grown at the height of sugar production, nearing the end of their life cycle. They are placed in the ovens within 24 hours of trimming.
La Gritona IS and ALWAYS were additive-free.
Melly's agave is first steamed for 24 hours in two thick-walled clay ovens and then allowed to rest for another 24 hours before crushing. The collected liquid is naturally fermented and oxygenated in open steel tanks at a rate that depends on the local air temperature, usually 8-12 days. At the end of fermentation, we double-distill the resulting blanco tequila. We age the distilled blanco for 6 months in reused American whiskey barrels (Jack Daniels and Balcones) before bottling.
Our reposados are very pale colored tequilas with 6 months barrel rest. We use the same casks over and over again to remove most of the oak residue, whiskey and color. We like to keep barrel notes to a minimum in our tequila. Our aging is only to mellow and complete the Blanco tequila from which La Gritona is derived, not to introduce new notes. We aim to retain the green and crisp characteristics of the original plant while allowing it to be briefly aged in oak. We do not use copper stills or tahonas, we do not diffuse or autoclave. Our boiled agave is crushed in a steel mill and the liquid is distilled in steel stills with copper coils. Every stage of production takes place under one roof, and our company is overseen by a small staff of local women who carry out each process from start to finish.
Any leftover agave left over from production is given to local farmers to use as cattle feed. Our bottles are hand blown from recycled Mexican glass in Zapopan, an hour away from the distillery.
La Gritona has a light sweetness and retains the aroma and true essence of the plant from which it was distilled. Although the LG has been oak-rested for 6 months, the flavor is herbal, with agave notes that weren't barrel-whistled. It's a very herbal tequila, without the oak, pepper, vanilla or sweet caramel that one might associate with Highland reposado. It retains the crisp qualities of a fine silver tequila, but shows subtle signs of Melly's intentional aging. The finish is extremely round, not burnt. We recommend straight up, without ice, lime, salt or mixer. Best when paired with a nice cold Mexican lager or pilsner.
