Exciting and seductive, a perfectly balanced 100% agave tequila aged for more than a year, which reflects the delicate balance of agave and wood spices with a light hint of smoke.

Agaves grown in the highlands of Los Altos de Jalisco are exposed to hot dry periods followed by heavy rainy seasons and fertile, mineral-rich soil, resulting in richer, better quality agaves that mature in 7-9 years. After harvesting, agave cores for about 7 hours. processed under low pressure in steel furnaces - autoclaves, then cooled and crushed by a mechanical mill. Fermentation takes place in large steel tanks for 72 hours until 4-4.5% alc. quantity. Distillation to 52-54% alc. volume is obtained after two slow distillations in steel pots with a copper evaporator. Blanco tequila is poured into oak barrels used in the production of bourbon and matured for 16 months.

Aromas: seductively pleasant shades of oak, with hints of sweet vanilla, coffee, fruit, herbs and tobacco.
Taste: a perfect balance of rich agave, oak smoke and vanilla notes with a light touch of caramel, coffee and pepper.
Aftertaste: soft and rich hint of agave, vanilla, smoke, wood.

The creator of Calle 23 tequila - Sophie Decobesq is a French biochemist specializing in fermentation, who has been in love with Mexico and tequila for 20 years. Sophie's passion for creating a special tequila was surprising. She collected wild yeast in the agave fields with the help of plates and a needle, which she then incubated. Once these cultures were established, she developed her signature yeast. Deciding that highland agaves were perfect for the tequila she envisioned, she began fermenting batches of boiled agaves with various yeasts and yeast combinations. Sophie's team created many different tequilas, blind tasting the results until they finally achieved the result they wanted, bursting with the distinct flavor and aroma of boiled agave. All the production processes from agave roasting, distillation to aging are based on passionate experiments and blind tasting, because as Sophie herself says, agave is my heart!
