Sotoli is a traditional drink of the states of Chihuahua, Durango and Coahuila in Mexico. It is made from the so-called 'Desert Sponge' plant, which is not agave, but has similar properties and belongs to the same Asparagaceae plant family.
This sotol is made from wild-ripened Dasylirion Cedrosanum plants, the cores of which are roasted in conical pits lined with stones and fired with wood. Later, they are crushed with big axes and hammers, and fermented naturally in open 1000-liter pine tanks with wild yeast. Distilled twice in copper stills.
Aroma: herbs, smoke, mineral and caramel tones.
Taste: mild, light citrus acidity, raspberry, white pepper, smoked grass, pine nuts.
Aftertaste: dry, with a pleasant balance of earthy spices.
We recommend combining it with chicken, turkey or lean pork stews and vegetable casseroles. For dessert, sotoli is perfect with a candied grapefruit slice.
