It's a rich, balanced and incredibly distinctive raisin that, with its strong, fermented, aged cheddar and blue cheese flavor and aroma, is usually served at the end of dinner as a great digestif. In addition to the cheese, the taste reveals rich roasted agave, sweetness with a hint of cashew butter, herbs, light smoke.

Wild agave growing in coniferous forests is roasted in a clay oven; crushed manually; naturally fermented in shallow tanks due to foaming; later, it is distilled once (proof of the producer's skill) in earthen, Filipino-style pots, which determines the richness and expressiveness of the raisia.

Raisija is essentially mezcal, only made in the tequila region of Jalisco. It can be produced from a variety of wild or cultivated agaves, with great differences in the surrounding environment, equipment and production methods. All this gives the distillate a fragrant, unique spectrum of taste and expression.
