It's an elegant distillate with a rich aroma but less intensity than the usual agave, making it quite an attractive choice for novice mezcal tasters.
Aromas: sweet whiff of citrus, melon and thyme, fresh mint, light tones of smoke and damp earth.
Taste: dry, slightly smoky, balanced notes of citrus, strawberry, rosemary, thyme and other herbs.
Aftertaste: long, dominated by dried figs, pineapple, chocolate, salt and pepper. The finish is sharp, but quite mild compared to most other mezcals.
Espadin variety agaves are grown for 7-9 years and prepared using traditional methods: they are baked in underground pits lined with stones and fired with wood, then crushed with a stone roller - tahona, and fermentation takes place naturally, in open wooden containers with wild yeast. Distilled twice in copper pots.
We recommend enjoying it alone, with a slice of orange, lime seasoned with seasoned salt, or in combination with spicy food.
