The balanced complexity of mezcal begins with an enticing bouquet of roasted agave, subtle smoke and hints of tropical fruit. On the palate, you will encounter a symphony of flavors, from the sweetness of agave to the earthiness of roasted minerals and the lingering aftertaste with hints of spice.
This unique mezcal is naturally and expertly made in a traditional small distillery without any additives. Made according to the old family methods of maestro mezcalero Emigdio Jarquin: the agaves are roasted for 5-7 days in underground, stone-lined and wood-fired pits (Horno de tierra), then allowed to cool in the sun for one or two weeks. Cooled agaves are crushed with a cement roller - tahona, pulled by a mule, and natural fermentation, lasting about 3 days, takes place in wooden tubs. Distilled 2 times in copper stills using a 'Refrescador' (cooling technique) device, thanks to which two distillations can be carried out in one run. Maestro Emigdio performs a simple lees filtration through a cellulose tube filter before bottling the mezcal.

Aromas: Roasted agave, sweet caramel, candied nuts, garden flowers with notes of lemon cookies, light smoke, earthy spice and pepper.
Palate: Rich, sweet pastry glaze, honey, pineapple, ash, citrus and tropical fruits, mint, roasted agave, salty air, pears in syrup, tahini and white pepper.
