This truly legendary Espadín mezcal has a very rich aroma, an intense profile and a long rich aftertaste. A man, a myth, a legend... the mysterious mezcalero Celso Luis Santiago of Río Golea is spoken of with respect by agave connoisseurs around the world. He only distills this one main variety of mezcal agave, but he does it so beautifully, uniquely and powerfully. The humble wild agave gives mescal a natural richness and pleasant creaminess. Not as overtly smoky or vegetal as some Espadins, but retains a toasty, charcoal-like note with aromas of summer melons, eucalyptus, lime and stony earth.
Ripe wild 'Espadin' agaves are prepared using traditional methods: roasted in underground pits lined with stones and fired with wood, then crushed with a stone roller - tahona, and fermentation takes place naturally in open wooden containers with wild yeast. Distilled twice in copper pots.
Aromas: intense smoke, citrus fruits, melons, hot spices, hard cheese, green herbs, wet earth tones.
Palate: Full-bodied with plenty of minerality, smoke, citrus, blueberry, olive, herbal and woody notes.
Aftertaste: long, rich and spicy at the end. Unique!
We recommend enjoying it on its own, with a slice of orange, lime seasoned with seasoned salt, or in combination with food.
