This unique, light mezcal is produced like the classic, bolder Fidencio flagship 'Clásico', except for one process - the agaves are heated for 3 days in a special brick kiln-oven placed on steel shelves, giving the pure expression of Espadin agave, only without the smoke (sin Humo) sensation. typical of mescals.
Espadin variety agaves are grown on a biodynamic farm for 10-12 years; after harvesting, the agave cores are baked in an oven, then crushed with stone rollers, and fermentation takes place naturally in open wooden tanks with wild yeast for 7-13 days. Distilled twice in copper, wood-burning, alembics. The distillation equipment is equipped with additional chambers that recirculate the distillate, softening the intensity and giving elegance to the mezcal.
Aroma: agave, caramel, subtle tones of charcoal, pepper, paprika, green apple and baked pear.
Palate: Slightly sweet, rich agave, wonderfully delicate with faint hints of fruit, nuts, wet earth and spice and a faint hint of smoke.
Aftertaste: Long and warm, with earthy, vegetal and peppery notes.
We recommend sipping it alone, combining it with light snacks or fruit, as well as trying it mixed in cocktails, or maybe giving it to friends who don't like mezcal :)
