An expressive and fragrantly smoky raisin, characterized by a complex taste that jumps between fruits, spices, herbs, until it settles on the freshness of salsava.

Aroma: An intriguing combination of gravel, rubber tires and old wood smoke, with notes of fruit, sweet spices, herbs, and charred green leaves.
Taste: mineral, sweeter and milder than when sniffing. White pepper, garden fruits, menthol, mint, anise dominate.
Aftertaste: sweet, smoky, noticeable lemons, green leaves, menthol.

Wild agaves are roasted in a wood-fired Adobe-style clay oven; crushed with a horse-drawn stone roller (tahona); naturally fermented with airborne wild yeast; later, the wort is distilled 2 times in a fig tree trunk with Filipino-style copper vessels.

Raisija is essentially mezcal, only made in the tequila region of Jalisco. It can be produced from a variety of wild or cultivated agaves, with great differences in the surrounding environment, equipment and production methods. All this gives the distillate a fragrant, unique spectrum of taste and expression.
