From one of the best tequila distilleries, Fabrica Santa Rita, the traditional distillate doesn't meet the guidelines of what can legitimately be called tequila, so they're labeled with the 'Destilado de Agave' category, which acts as a bridge between tequila and mezcal.
Agaves ripened in the surrounding plantations are baked in a brick steam oven, crushed in a triple flow mill, fermented for 7 days in open stainless steel tanks with wild and proprietary yeasts, then distilled twice in steel and copper stills. It rests in steel tanks for 45 days before bottling.

Aroma: boiled agave, baked bread, baked grapefruit, alcohol.
Taste: light and fresh sweetness, green pepper, anise, cooked agave, cream, tangerine, vanilla, mineral.
Aftertaste: smooth, milky chocolate with lingering agave and herbal notes.

The founder of Herradura (Pasaga) tequila, Don Alfonso Jiménez Rosales, after a family dispute, in the 1950s. created its own brand Caballito Cerrero (Wild Horse That Needs No Horseshoes) and uses only Chato agave, which was often used in tequila production before the NOM blue agave law came into force. They were the first and for a long time the only producers in the region to purposely refuse to use the term "tequila" because they don't need help with the marketing power of the word "tequila" because their knowledge and respect for the agave elixir is greater than what the law dictates.
