The deep notes of roasted corn, honey, vanilla, black tea and leather are very original and the drink profile itself is unlike any other whisky. A rich and complex corn whiskey made from the unique 100% Mexican Cacahuazintle corn that grows exclusively in the states of Mexico, Tlaxcala and Puebla. Cacahuazintle has large, chunky kernels and is commonly used to make pozole, cornbread, and other foods.

After drying in the field, a small part of the corn is malted. Most of the corn is nixtamalized: the kernels are peeled from the cobs, heated, soaked, washed. Later, the kernels are roasted and ground into the finest possible flour, which is dissolved in steel tanks with hot water. Malted corn is added to the mixture and stirred for several hours. During this process, the starch turns into wort, which is slowly fermented and then distilled twice in copper stills. Aging takes place in a combination of used and new toasted oak barrels, in an open warehouse without walls, where temperature fluctuations and changing conditions provide a unique aging profile.

Color: transparent, light golden.
Aromas: Roasted corn, buttery popcorn, herbal notes, tones of vanilla, toffee and preserved peaches, with earthy black tea, floral honey, cloves.
Taste: Deep corn, milk chocolate, soft vanilla, oak chips, baked apples, caramel with hints of white pepper, cinnamon and cloves.
Aftertaste: vanilla ice cream with chocolate and a little bit of popcorn and fruit from the garden.
