Incredibly unique, delicately flavored mezcal with just a light smoke and perfectly evolving flavors. Bananas, cookies, and mangoes are just some of the wonderful flavors you'll experience when sipping this goodness.
Mezcal is produced according to old traditions. Ripe 8-10 year old agaves are carefully selected and roasted in underground stone ovens for more than 5 days. Cooled agaves are crushed with a stone mill - tahona, to release all the juice. For fermentation, chopped agave fiber, pulp and juice are placed in wooden containers and left to ferment with natural yeast for 5 or more days. During this process, with the help of yeast, the sugar is converted into an alcohol called tepache. Tepache, pulp and fiber are placed in copper pots where 2 distillations take place.
Aromas: light sweetness of roasted agave, fresh citrus, smoky accents, field herbs.
Palate: Roasted agave, sweet honey, hazelnut, ripe tropical fruit, earthy smoke, some orange peel bitterness, earthy and vegetal notes.
Finish: Long with sweet agave, nice smoke, light tickling bitterness and herbal profile.
We recommend sipping it alone, with fruit and trying it in cocktails.
