Mescal with intense flavor and exceptional character from wild Jabali agaves, which take 15-18 years to mature and are very difficult to work with. During fermentation and distillation, these agaves cause foaming and expansion, sometimes damaging the stills as the spirit seems to explode! This agave has a uniquely wild attitude, and its mezcal has a sweet, herbal, floral profile.
Maestro mezcalero - The reclusive and mysterious José Santiago López, also known as Don Cheto, is a third-generation mezcalero from Santiago Matatlan. La Medida is very happy to offer the unique Don Cheto Jabalí mezcal to the world!
Aromas: earthy notes with a hint of smoke and subtle fruity and floral nuances.
Palate: A very complex but harmonious profile with wild agave, sweetness, an interplay of spices and a pleasant spiciness, with excellent notes of straw, honey, flowers, citrus, wood and minerals.
Traditional mezcal production methods are used: agaves are roasted in underground stone-lined and wood-fired pits, then crushed with stone rollers, and fermentation takes place naturally in open wooden tanks with wild yeast. Distilled twice in wood-burning copper pots.
