Incredibly unique, bright-flavored mezcal from the wild agave Salmiana, which grows naturally on the high plateau of San Luis Potosi, in the calcareous soil, so the flavor profile has very pronounced chalky tones. However, there are floral and herbal notes at the top, creating a pleasant sweetness that balances the mezcal's subtle intensity.
There is almost no smoke in mezcal because the agave is roasted in brick ovens (horns) and not in underground stone-lined pits. Roasted agave is crushed with a stone roller (tahona) and naturally fermented in brick tanks with wild yeast. The mezcal is distilled twice in small copper stills and bottled in glass vessels to rest for 60 days.
Aromas: Insanely unique!, vanilla ice cream, roasted agave, spicy jalapenos, blue cheese, figs, cilantro, olive brine, light smoke, ripe tropical fruit.
Taste: very complex, sweet at first, then slightly sour, then tickling spiciness, noticeable buttery smoothness, touches of dates, figs, flowers, tropical fruits, lemon peels, honey and wild herbs.
Aftertaste: long, complex, initially peppery with creamy and sweet fruity notes.
